For the past 100 years, Hathras has been a major producer of hing, or asafoetida. The district now has a unique identity as a result.

The produce

Asafoetida is named after the Latin word foetidus, which means stinking, and the Persian word aza, which means mastic or resin. It is a gum made from the sap of the ferula plant, which is a gigantic fennel with an unpleasant smell.
